This is a seven-year-old Irish whiskey from The Whistler, bottled at cask strength. It matured first in ex-bourbon casks, which show in its full caramel notes, and then in ex-Oloroso sherry casks. It is not chill-filtered and has no added colour.
The Whistler is a project of the Cooney family, who converted a former car dealership in County Meath into the Boann Distillery.
The nose combines salted caramel, fresh apples, juicy apricots and dried orange peel. The palate has soft toffee with a light salty crust, delicate citrus and a handful of dried fruit, with white pepper lingering. The finish is short and spicy, ending on cream caramel.
