The Whistler 7 Years

The Whistler 7 Years is an Irish single malt, matured for seven years in oak. It spent time first in ex-bourbon casks, then in ex-oloroso sherry casks. It is non-chill-filtered and has no added colour. The Whistler is a project of the Cooney family, who converted a former car showroom in County Meath into the Boann Distillery. The colour is soft amber. The nose has dark fruits such as blackberries and raisins resting on caramel sauce, surrounded by creamy, cold lemon sorbet. On the palate, a few raspberries mingle with fresh lemon zest and lightly prickly white pepper. The finish is short, with dry oak and the last of the lemon.
