The Whistler P.X. I Love You is an Irish single malt matured in ex-bourbon casks, then finished for at least six months in PX sherry casks. It is bottled at 46%, non-chill-filtered and without added colour.
The Whistler is a project of the Cooney family, who converted a former car showroom in County Meath into Boann Distillery.
The nose is full of sherry, with dried berries, raisins, cherries, candied orange and sticky brown Demerara sugar. Woody at first on the palate, it then adds walnut, citrus and a hint of leather to the dried fruit and sugar. The finish is long, with walnut, dried fruit and a touch of dark chocolate.
