Thy Spelt-Rye is a Danish malted rye whisky in the distillery's core range, made from rye, wheat and barley grown on its own organic fields. The grain is malted on the family farm, and the whisky is matured in new American oak casks.
Thy Whisky began as a family company in 2010 and is still family-run. It uses its own malting system and a single distillation, and this bottling is a single estate whisky, non-chill filtered and of natural colour. The recipe draws on the Danish fondness for rye and rye bread.
It is described as balanced, full, fruity, spicy and floral, with notes of vanilla, pink pepper, cream caramel, citrus and heather flowers.
