Thy Whisky – Kornmod No 18

Kornmod No 18 from Thy Whisky is made from Imperial, a Danish barley variety that had been forgotten and was revived after more than 100 years dormant in the Nordic Genebank. It was matured in casks that previously held the distillery's own spelt-rye whisky, together with a few fresh American bourbon casks. The barley brings fresh green notes and citrus, set against warm, spicy sweetness from the spelt-rye casks, and vanilla and a little fresh oak from the bourbon casks. The whisky is soft, spicy and sweet, with a nose of freshly picked apples, vanilla and summer.
