Tipperary Watershed Single Malt (70cl, 47%)

Watershed is an unpeated Irish single malt from Tipperary, matured in first-fill bourbon casks and bottled at 47% in a 70cl bottle. Its name comes from the water used to reduce it. The whisky is cut to strength with water from Ballindoney farm outside Clonmel, which the Ahearn family has farmed for over 200 years. The farm sits on a plain sheltered by the Galtee, Knockmealdown and Comeragh mountains, and fresh water runs down from them to be collected for the purpose. It is non-chill filtered and of natural colour.
