Trimbach Liqueur de Framboise (37.5cl, 25%)

Trimbach Liqueur de Framboise is a raspberry liqueur from the Alsace house of Trimbach, in a 37.5cl bottle at 25% ABV. It is made by blending raspberries, water, alcohol, sugar and burnt sugar in a refrigerated vat, then filtering and bottling once it reaches 25%. It is deep ruby and viscous. The nose is intense raspberry, almost a sweet syrup, with oriental spice. The palate is lush and very sweet, kept in check by the tartness of the fruit. It is best served well chilled, over ice cream or desserts, or in mixed drinks such as a raspberry martini.
