Very Olde St. Nick Immaculata is a Kentucky bourbon from Preservation Distillery in Bardstown, released in 2026 as a 13-barrel batch. It is bottled at cask strength, 118.1 proof (59.05% ABV), and is unfiltered.
The blend is built on a base of 19-year-old Kentucky bourbon, joined by 8-year-old Preservation wheated pot distilled bourbon, 10-year-old high-rye Kentucky bourbon and further Kentucky bourbon barrels.
The nose is caramel, aged oak, vanilla and dark fruit. The palate brings brown sugar, dried cherry, cinnamon, leather and honeyed wheat with peppery rye spice, and the finish is long and warming, with oak, spice and caramel.
