Waiheke Whisky – DYAD Chardonnay 7 Year Old (70cl, 46%)

Waiheke Whisky DYAD Chardonnay is an unpeated New Zealand single malt, bottled at 7 years old and 46% in a 70cl bottle. It is non-chill filtered, with no added colour. The malt was milled and double distilled in copper pot stills on Waiheke Island in 2015, then aged first in ex-Bourbon casks. It spent its last 2 years in a French oak Chardonnay barrel that was wet filled, meaning the new make went in as soon as the wine was emptied. It was bottled in 2022. The nose brings melting butter and oak with sherbet lemons and honey. The palate is oily and savoury-sweet, with sweet miso, lemon and butter, and a long finish of toasted hazelnuts, bready malt and salinity.
