Wakatake Onikoroshi Demon Slayer Junmai Daiginjo Sake (72cl, 17%)

A Junmai Daiginjo sake from Japan, bottled at 17% in a 720ml bottle. This version of Demon Slayer is single pasteurised and has a new head brewer. It is semi-fruity, with a distinctive dryness and a lively tail. Good acidity (1.4) comes with a sake meter value of 0. Serve it chilled, ideally in a wine glass. The head brewer prefers it as it comes up towards room temperature, when the texture becomes fuller. The aromas are plum, melon and peach. On the palate come peach and tangerine, and as it warms, richer touches of honey and citrus.
