Waterford – Ballymorgan 1.1 (50%)

This is an Irish single malt from Waterford Distillery, bottled in 2020 at 50% as part of the Farm Origin Series, which looks at the influence of terroir on whisky. Only 9000 bottles were released. It is made from Overture barley grown on Robert Milne's farm in Wexford. The whisky matured in first-fill American oak, new European oak, French oak and Vin Doux Naturel barrels. The nose combines fine chocolate with fruit that emerges slowly. On the palate come firm vanilla and apple with chocolate, lime and a touch of clove. The finish brings cedar wood, barley and the sweetness of green apples.
