Waterford Fenniscourt 1.1 is a peated Irish single malt, aged three years and bottled at 50% in a 70cl bottle. It belongs to the Arcadian series, which looks back at older Irish ways of making whiskey, and it is a single farm origin release.
The barley was peated to 38 ppm. Maturation took place in a mix of casks: 37% first-fill American oak, 19% new American oak, 20% French oak and 24% French sweet wine casks (Vin Doux Naturel). The outturn is 11,500 bottles worldwide.
The nose brings grass, salty notes, pear skin, forest moss, dried thyme, malt biscuits, marzipan and baked banana. On the palate it is dry and meaty, with barbecue smoke and white pepper. The finish is long, with soft earthy tones.
