Waterford Organic Gaia is a certified organic Irish single malt, Edition 1.1, and the first organic release in the Arcadian Series. It was created by Mark Reynier, formerly of Bruichladdich, using organic Irish barley grown by a small group of certified farmers.
The whisky matured in a combination of French and American oak casks. It is non-chill-filtered, has no added colouring, and is bottled at 50% in a 75cl bottle.
The nose brings sourdough crust, green apple and lemon zest, with herbal tea and malted barley. On the palate come citrus oils, wild honey, pear skin and cracked pepper, then clove and oatmeal. The finish is long, grassy and lightly dry, with malt sweetness and a touch of pepper.
