Waterford Sheestown 1.1 is an Irish single malt, one of the first releases in the distillery's Single Farm Origin series. It was distilled from 100% Irina barley grown by Phil O Brien just outside Kilkenny.
The spirit matured in a combination of French and American oak casks and was bottled at 50% without chill filtration or added colouring.
The nose is earthy, with clove, fruitcake, lightly spiced pears poached in red wine, honeycomb and midsummer hay. The palate brings soft spice, citrus peel marmalade and fresh honey, and the finish is long, with clove and a warm tingle.
