Waterford – Single Farm Hook Head 1.1

Waterford Single Farm Hook Head 1.1 is an Irish whisky made from barley grown by Martin Foley in the shadow of the Hook Head lighthouse, on Ireland's southern coast and 10 miles from the distillery. The clay and loam soils there are derived from limestone and belong to the Elton Series. The fields face Atlantic storms, sea mists and ocean breezes. The nose combines earthy maltiness, fresh soil, citrus peel, breadcrust, clove and white pepper, with caramel, milk chocolate and salted popcorn. The palate is spicy up front, with ginger biscuits, liquorice, lemon zest and chilli chocolate. The finish is dry and oily, with spice that lingers.
