West Cork IPA Cask Matured is a blended Irish whiskey from the West Cork distillery in the south of Ireland, in a 70cl bottle. It is made from 75% grain whiskey and 25% malt whiskey.
The whiskey is first matured in first-fill ex-bourbon casks, then finished in casks that held Black's of Kinsale IPA, which adds a gentle brewing character.
The nose is lightly hoppy, with sweet malt, honey and flowers. The palate is soft and balanced, with toasted hazelnuts, malted cereals and sweet spices, and a fresh note. The finish is harmonious, with malt, fruit and light spice.
