This is a straight bourbon from Whiskey Acres in DeKalb, Illinois, aged for a minimum of seven years and bottled at 53.5% ABV (107 proof) in a 75cl bottle.
Every grain is grown on the family farm where the whiskey is distilled. The mashbill is 75% corn, 15% soft red winter wheat and 10% malted barley, and the spirit matured in 53-gallon Char 3 barrels.
The nose is perfumed, with red apple, peanut butter, coffee cake and a floral sweetness. The palate is creamy and sweet, with herbal notes, pepper and caramel popcorn. The finish is smoky and tannic, with vanilla, peanut and pear.
