Whiskey Acres Farm Crafted Bottled in Bond Bourbon is an estate bourbon distilled and bottled in DeKalb, Illinois, at 50% in a 75cl bottle. It is the first bottled-in-bond bourbon from Illinois' first estate distillery, and every grain in it is grown on the Whiskey Acres farm.
The mashbill is 75% yellow-dent corn, 15% soft red winter wheat and 10% malted barley. The bourbon is aged for over four years in number-three charred American oak barrels, kept in converted metal grain bins. It is non-chill filtered.
The nose is earthy, with straw, dried grass, green apple and cinnamon. The palate is cereal and toasted wheat, then vanilla, caramel and charred oak. The finish is long, with caramel and spice fading into toasted grain.
