This is a straight bourbon from Whiskey Acres Distilling Co. in DeKalb County, Illinois, an estate distillery that grows its own grain. The mashbill is 75% corn, 15% soft red winter wheat and 10% malt.
The bourbon then spent a further 12 to 17 months in barrels that had held real maple syrup, and it was bottled at barrel strength, 58.7% ABV, without being reduced.
The nose brings milk chocolate-covered raisins and sweet maple, followed by toasted oak, cinnamon and clove. Maple and vanilla run through the palate, with toasted coconut, crème brûlée and candied walnuts. The finish is long and warming, with caramel, toffee and maple syrup.
