Whiskey Del Bac – Ode to Islay American Single Malt

Ode to Islay is an American single malt from Whiskey Del Bac, formerly known as the Winter Release. It takes its inspiration from the heavily peated malts of Islay, but it is made with mesquite in place of peat, drawing on Southwestern ingredients. The whiskey was matured in new American white oak and finished in ex-bourbon barrels. Cocoa nibs, cinnamon, charred mesquite and earth show on the nose, while the palate brings caramel-dipped apples, sour cherry and dulce de leche. Served neat, soft vanilla gives way to mesquite smoke and white pepper, tapering to cinnamon and candied toffee.
