WhistlePig Old World Rye is a 12 year old rye bottled at 43% ABV. It matured for 12 years in new American oak, then the spirit was divided between three finishing barrels: Madeira (63%), Sauternes (30%) and Port (7%).
It was conceived as an experiment in giving rye a more Old World character, and its fruit and spice are described as well suited to a rich meal.
The nose brings caramel, vanilla and winter fruit. On the palate there is rye spice with apricots, plums, raisins, dates and honey. The finish carries dark chocolate, winter fruit, caramel and vanilla.
