Baby Jane is a small batch bourbon from Widow Jane Distillery, built around the distillery's own heirloom corn variety. The Widow Jane team selected, grew and tested the corn over several years, and it is the grain behind the bourbon's creamy character. It is distilled in Red Hook, Brooklyn and in Kentucky, then matured in new charred American oak.
The whiskey is non-chill filtered and bottled at 91 proof with mineral-rich water from the Rosendale mines in New York.
The nose brings cedar wood, salty air, green grape and honeycomb. On the palate come raspberry leaf, salted caramel, fresh fig and allspice, and the finish is peach compote with star anise and milk chocolate.
