A limited annual release from Widow Jane that blends 15-year-old straight bourbons from Kentucky, Tennessee and Indiana. It is bottled at 49.5% ABV in a 75cl bottle.
The bourbons are assembled by hand in small batches of five barrels and proofed with limestone mineral water from the Rosendale Mines in New York. Each edition of The Vaults is finished in a different rare wood.
The nose shows Amaretto cookie and honeycomb, then fig leaf and cinnamon bark. The palate begins with savoury rosemary and olive oil before butterscotch, dried apricot, raisin and cocoa. The finish is long, with black licorice, honeysuckle and coconut macaroon.
