Widow Jane Baby Jane Bourbon (75cl, 45.5%)

Widow Jane Baby Jane is a small-batch bourbon bottled at 45.5% in a 750ml bottle. It is built around Baby Jane corn, a proprietary cross of Bloody Butcher Red and Wapsie Valley Yellow heirloom varieties. Each batch is assembled by hand from just a few barrels. The bourbon is non-chill-filtered and reduced with mineral water from the Rosendale mines of New York. The nose combines salty air, green grape, honeycomb and cream soda, with a hint of spicy cornbread. The palate has strawberry-and-cream taffy, salted caramel, fresh fig and allspice. The finish is medium-long, with peach compote, star anise and dry cut hay.
