Wilderness Trail – Kentucky Straight Rye Bottled-in-Bond (75cl, 50%)

This is a Kentucky straight rye whiskey from Wilderness Trail in Danville, bottled in bond at 100 proof in a 75cl bottle. The distillery uses a sweet mash rather than the more usual sour mash, and fills the barrels at a notably low entry proof. The result is a softer, more grain-forward whiskey, aged to the standards of the Bottled-in-Bond Act. The nose is bright and floral, with fresh mint, clove, sweet dark fruit and toasted oak. On the palate, peppery rye and cinnamon meet dark cherry, vanilla cream and caramel. The finish is long and warming, with a trail of herbal spice.
