This is a straight bourbon from Woodinville Whiskey Company in Washington State, bottled at 50% ABV. It is distilled in a pot still from locally sourced Washington grain and matured in heavily charred oak barrels.
It is then finished with toasted applewood staves from the Pacific Northwest, which add fruit and a gentle smokiness to the bourbon.
The nose is baked apple, vanilla bean, toasted oak, cinnamon, caramel and maple sugar. The palate is rich and layered, with caramelised apple, brown sugar, baking spice, toasted wood, honey and roasted nuts. The finish is long and warming, with applewood smoke, sweet oak, vanilla and cinnamon.
