This is an 11-year-old Yamazaki single malt from Japan, distilled in 2003 and bottled by the Scotch Malt Whisky Society as cask 119.13, named Fathoms Deep. It comes from a single first-fill bourbon barrel, bottled at 60.2% ABV in a 70cl bottle, and 149 bottles were drawn from the cask.
The nose has wood varnish and buttery toffee, with cloves, butterfly cookies, orange oil, white peaches and popcorn with burnt butter appearing late. The palate is rich vanilla with soft fruit, and oak that tingles with a touch of citrus. The finish is sweetened whipped cream and English toffee, as the peaches slowly fade.
