Yellow Spot 12 Year Old (70cl, 46%)

Yellow Spot 12 Year Old is a triple-distilled Irish single pot still whiskey made from malted and unmalted barley at Midleton Distillery for Mitchell & Son. It matures for at least twelve years in three cask types throughout: American bourbon barrels, Spanish sherry butts and Spanish Malaga wine casks. The Malaga casks give a full maturation rather than a finish, adding sweetness and contributing to the honey and peach notes. It is bottled at 46%, non-chill-filtered and without added colour. The nose has freshly cut hay, black pepper, red bell pepper, nutmeg, clove oil, green tea, honey and peach. On the palate, honey sweetness meets pot still spice, with coffee, milk chocolate, crème brûlée, red apple and toasted oak. The finish stays sweet, with red grape and dry barley.
