Yellowstone Special Finishes Collection Rum Cask Bourbon (75cl, 50%)

Yellowstone Rum Cask is the second release in the Special Finishes Collection from Limestone Branch Distillery, made under Master Distiller Stephen Beam. It starts with the distillery's four-year-old Kentucky Straight Bourbon, mashed from 75% white heirloom corn, 13% rye and 12% malted barley. The bourbon then spends nine weeks in rum casks sourced from Havana, Cuba, which bring molasses and tropical sweetness alongside the bourbon's spice. It is bottled at 100 proof, 50% ABV, in a 75cl bottle. The nose has gingerbread, poached pear and fresh-cut hay. The palate offers toasted marshmallow, crème brûlée and toffee over oak, and the finish is long, with cocoa-seasoned oak, clove, tobacco leaf and honey.
