291 Colorado Bourbon Barrel Proof Single Barrel (70cl, 63.5%)

This is a single barrel, barrel proof bourbon from Distillery 291 in Colorado, bottled at 63.5% (127 proof) in a 70cl bottle. The mash bill is 80% corn, 19% malted rye and 1% malted barley, and the whiskey is under two years old. It is finished with toasted Colorado aspen staves. The nose brings aniseed, dark cherry drops, burnt cinnamon and ripe forest fruits with lemon, along with smoke like a dying campfire. The palate offers strongly roasted hazelnuts, dark cherries with pepper, pine resin, dried fruit, vanilla and a hint of old port. The finish is long, with earthy maple syrup and fresh wood notes.
