291 Colorado Bourbon Single Barrel (70cl, 50%)

This is a single barrel Colorado bourbon from Distillery 291, bottled at 50% ABV (100 proof) in a 70cl bottle. The whiskey is under two years old. The mash bill is 80% corn, 19% malted rye and 1% malted barley, and the bourbon is finished with roasted Colorado aspen staves. The nose brings aniseed, dark cherry drops, burnt cinnamon, ripe forest fruits and the smoke of a burnt-out campfire. On the palate are strongly roasted hazelnuts, dark cherries with pepper, resinous pine wood, a hint of old port and vanilla. The finish is very long, with new wood notes and earthy maple syrup.
