Akashi Single Malt is a Japanese whisky from the Akashi brand, created in 2007 by Mikio Hiraishi.
It is made from lightly peated malted barley and aged in sherry casks. It spent three years in bourbon casks and is unchill-filtered, which keeps its rich, round texture.
The nose brings chamomile, sherry and malt. On the palate, pastry notes of butter and vanilla lead to a soft, elegant finish ending on woody notes.
