Akashi Toji Japanese Blended Whisky (70cl, 40%)

Akashi Toji is a Japanese blended whisky at 40% ABV, in a 70cl bottle. It is made by a Toji, a grand master of sake making, who applies sake-making methods to whisky. The pot still is smaller than those used in Scottish and other Japanese distilleries, which lowers the level of fusel alcohol, so the whisky needs less time in cask. The nose is honey, pepper, vanilla and light peat. The palate adds chocolate, oak and dried fruits to the honey, pepper and vanilla. The finish is longer, with honey, spices and cinnamon.
