Ardara Single Malt Irish Whiskey 2025 Edition (70cl, 46%)

The 2025 Edition is the first single malt bottling from Ardara Distillery in Donegal. It is made from heavily peated barley malt at 55 ppm and triple distilled, with the whole grain carried through into the wash still. The spirit goes into solera vats before it is matured in American bourbon and virgin oak casks. It is bottled at 46%, with 8,000 bottles released, and is non-chill-filtered and of natural colour. The nose combines sweet cereal and sponge with poached fig, coconut and raisin, with a hint of pipe tobacco and cold ash. On the palate come warm pastry, poached pear, toasted coconut, almond and leather, before bonfire smoke builds. The finish is soft smoke and baked apple.
