This Bunnahabhain was distilled in 2013 and bottled in 2025 at 11 years old, in a selection by the Thompson brothers, Phil and Simon. The brothers grew their interest in whisky in the family hotel, where they created a whisky bar at Dornoch Castle that is well known far beyond the Highlands. They have since made a name as independent bottlers of hand-picked whiskies. Their brand and micro-distillery are housed in the castle's tiny private fire station, with a move to the new Struie Distillery buildings planned for 2026.
