Dolin Rouge is a French sweet vermouth from Chambéry in Savoie, bottled at 16% vol in a 75cl bottle. It is made from Ugni Blanc wine with over 30 Alpine botanicals.
The herbs and plants come from the meadows above Chambéry and are macerated directly into the base wine rather than added as ready-made extracts. Only sugar is used to sweeten it, and the vermouth is made under the Chambéry PGI.
The nose offers sarsaparilla, citrus zest, quince, stewed fruit and prune, with clove, cinnamon and a little sage. The palate is soft and medium-full, with orange peel, light quinine bitterness and a touch of caramel, more tart than sweet. The finish is moderate, herbal and slightly spicy.
