This is a Highland blended malt from Douglas Laing's Timorous Beastie range, and the second release in the Cheese Cellar Collection, a trilogy written around pairing whisky with artisan cheese. It was released in 2024 in a 70cl bottle.
The regular Timorous Beastie was finished for several months in Madeira casks. The bottling is 48% ABV, non-chill-filtered and without added colouring, and limited to 4,000 bottles worldwide. Gruyère is the pairing Douglas Laing recommends.
The nose is ripe orchard fruit with honey, toasted almonds and a delicate floral note. On the palate, toffee and caramelised apple lead into juicy plum and gentle spice, with a silky texture. The finish is sweet and warming, with vanilla and orange marmalade.
