Garrison Brothers Honeydew is a honey-infused Texas bourbon from the distillery in Hye, bottled at 40% in a 75cl bottle.
It starts as the distillery's straight bourbon, aged for at least four years in charred American white oak barrels. The honey comes through oak rather than being stirred in: used bourbon barrel staves are cut into small cubes, soaked in Texas wildflower honey, then left in tanks with the bourbon for seven months.
The nose offers caramel, brown sugar, oak and beeswax. The palate brings wildflower honey, ripe peach, apricot, vanilla and orange peel, with a little white chocolate. The finish is warm, with charred oak and lasting honey.
