GlenAllachie – 12 Year Old Sauternes Wood Finish (70cl, 48%)

GlenAllachie 12 Year Old Sauternes Wood Finish is a Speyside single malt from The Wood Collection, bottled at 48% in a 70cl bottle in natural colour and without chill-filtration. It first matured in bourbon casks, then moved into hogsheads that had held the sweet Bordeaux white wine Sauternes. Billy Walker had the casks watched at the distillery until the balance of spirit and wood was right for bottling. Honeycomb, butterscotch and toffee sauce meet candied ginger, mocha and peach on the nose. The palate opens with tropical fruit, heather honey and baking spices, followed by demerara sugar, coconut and marmalade. Citrus, caramel and glacé notes fade through the finish.
