This is a 16 year old GlenAllachie, the first in The Past, Present and Future Series, released for Master Distiller Billy Walker's fifty years in the whisky industry. It recalls the heavily sherried expressions that first made his name.
It is a vatting of nine Spanish sherry butts from 2005, fully sherry matured. It is bottled at a natural cask strength of 57.1%, with no added colour and no chill filtration, in a release of 4,000 bottles worldwide.
The colour is deep mahogany. The nose brings walnuts, heather honey and dried fruits, then toasted coffee, orange peel and cinnamon. The palate has fig syrup, caramelised muscovado sugar, roasted pine nuts, crystallised ginger and dried apricots.
