This GlenAllachie 16 Year Old marks Billy Walker's 50th anniversary in the whisky industry. It is the Past Edition of the Past, Present and Future Trilogy launched in 2022, and it looks back at the rich sherry cask style that built Billy's reputation as a whisky maker.
Billy chose nine casks distilled in 2005, matured for 16 years in Spanish sherry butts, and married them before bottling at a natural cask strength of 57.1%.
The nose offers walnuts, heather honey and subtle dried fruits, then roasted coffee, orange peel and cinnamon. The palate brings fig syrup, caramelised Muscovado sugar, toasted pine nuts, crystallised ginger and dried apricots.
