GlenAllachie 16 Year Old Present Edition marks Billy Walker's fifty years in the whisky industry. It is the second bottling in the distillery's Past, Present and Future series, in a 70cl bottle at 48% ABV, with 2,900 bottles released.
The whisky matured first in Pedro Ximenez and Oloroso sherry casks, then spent a secondary period in carefully chosen Mizunara casks, a Japanese oak known for being difficult to work and prone to leaking. Its porous wood is said to bring sandalwood and cinnamon notes.
The nose is dark chocolate, heather honey and toasted almonds, with ginger and orange zest. The palate has heather honey, cinnamon and crystallised ginger, and the finish is exceptionally long.
