Glenallachie – 16 Year Old Present Edition Billy Walker 50th Anniversary Series (70cl, 48%)

This 16 year old Glenallachie belongs to the Billy Walker 50th Anniversary Series. The Present Edition reflects Billy Walker's current approach to cask management at the Speyside distillery. It is bottled at 48% in a 70cl bottle, with no added colour and no chill filtration, in a release of 2,900 bottles. The spirit first matured in PX and Oloroso sherry casks, then spent a second period in Mizunara casks. This Japanese oak is scarce and expensive, and difficult to work with because it is prone to leaking. Its porous wood lets the spirit sink in deeply, adding notes of sandalwood and cinnamon.
