A 21 year old cask strength single malt from GlenAllachie on Speyside, released as Batch 5 and bottled at 49.2% ABV. Master Distiller Billy Walker vatted just five casks for it: Pedro Ximénez and Oloroso sherry puncheons and hogsheads. It has no added colour and is not chill-filtered.
Long maturation in Spanish sherry wood gives a dark, concentrated style with fruit cake, mocha, cherries, spice and a dense sweetness.
The nose brings honeycomb with brandy, molasses tart, spiced blood orange, cocoa and black truffle. On the palate come dark chocolate, baking spices and clementine peel, then molasses and candied ginger. The finish has black cherries, raisin butter and lasting sherry spice.
