This is a 21 year old Speyside single malt from Glenallachie, bottled as Batch 7 at a cask strength of 51.9% ABV.
The whisky matured in Pedro Ximénez and Oloroso sherry casks from Spain, a mix of puncheons and hogsheads chosen by Master Distiller Billy Walker. It is bottled without chill filtration or added colour, and its mahogany colour is natural.
The nose brings baked ginger, mocha, honeycomb and candied hazelnuts. On the palate come black cherries, muscovado sugar, raisin buttercream, manuka honey and dark chocolate. The finish is long and oily, with spiced plums, dark fruit and a little sherry.
