GlenAllachie – 35 Year Old (48%)

This is a 35-year-old single malt from GlenAllachie in Speyside, bottled at 48% ABV. Master Distiller Billy Walker chose six casks for it, the oldest reaching back to 1989: three Pedro Ximénez sherry hogsheads, one Oloroso sherry puncheon and two virgin oak casks. It is bottled without chill-filtration or added colour, and comes in a handmade oak box with a booklet of Billy Walker's handwritten notes on the cask selection. The nose offers cinnamon, heather honey, mocha and pineapple, with a little pomegranate and eucalyptus. On the palate come spiced caramel, tropical fruit, dark chocolate and a touch of espresso, followed by a finish of nutmeg and cloves.
