This GlenAllachie 9 Year Old belongs to The Wood Collection, a sherry series that looks at how different types of sherry cask shape whisky of the same age and cask history. It spent its first period in ex-bourbon American oak, then was finished in hogsheads that had held oloroso sherry. It is bottled at 48% ABV in a 70cl bottle, at natural colour and without chill-filtration.
The nose offers heather honey, mocha and dried apricots, with cinnamon butter, red velvet cake and marzipan. On the palate are dark chocolate, honeycomb and butterscotch, followed by dried red berries, ginger and plums. The finish is long, with poached apples and muscovado sugar.
