GlenAllachie – Sinteis Series Part 4

This is Part 4 of the GlenAllachie Sinteis Series, which looks at how different types of oak shape whisky. Billy Walker selected and combined the casks. The malt was first matured in Pedro Ximénez and Oloroso sherry casks, then moved into rare Mongolian virgin oak for a further period. Mongolian oak has a dense, tight grain and a distinctive spicy influence. It is bottled at natural cask strength, with natural colour and no chill filtration. It is described as rich in dark chocolate, baked orchard fruit and pastry, with spice and oak adding balance towards the finish.
