Hakushu 12 Year Old is a Japanese single malt bottled at 43% ABV. It comes from the Hakushu distillery, set in the forests of Mt. Kaikomagatake, and is made from 100% malted barley distilled in copper pot stills at high altitude. It was aged in American oak and sherry casks.
The nose is fresh, with toasted barley, chopped almonds, seed loaf, a little barrel char and woodsmoke, and earthy peat with green apple and mint. The palate is crisp, with orchard fruit, vanilla, light honey, citrus zest, pine and white pepper. The finish is clean, with lingering smoke, grassy herbs and oak spice.
