Hibiki 21 Year Old is a Japanese blended whisky from Suntory, bottled at 43% ABV. It is matured in sherry casks, American oak and Japanese mizunara oak, and the blend contains a high proportion of Yamazaki malt whisky.
The mizunara oak is behind the sandalwood and incense on the nose, which also brings honey and cooked fruit such as blackberry, apricot and raisin. The palate offers dark chocolate, toffee, dried plums and cherry, with cinnamon and a light, tea-like bitterness. The finish is long, with dried fruit, honey and mizunara spice.
